Ingredients:
● about 1½ cups Double G™ ham (diced into ¼” cubes)
●
about 2 cups red potatoes (diced into ¼” cubes)● 1 medium onion, diced small
● olive oil
● butter
● salt and cracked black pepper
Directions:
Add a little olive oil to a large skillet and brown the ham over medium heat. Once nicely browned, remove ham from the skillet. Melt enough butter in the skillet to very lightly coat the cubed potatoes (one or two tablespoons will normally do the trick). Add the potatoes, stir to coat with the melted butter, and cook over medium heat, stirring frequently, until tender and as brown as you like, then remove from the skillet. Add some olive oil or butter (your choice) to the skillet and sauté the onions until tender. Once the onions are translucent, add back the ham and potatoes and stir to combine everything. Salt and pepper to taste.
